Exercise: Cook a meal that traces the arc of the year:

  • A bite or starter from Blocks 1–10 (foundations)
  • A smaller course from Blocks 11–24 (proteins)
  • A main from Blocks 25–40 (world cuisines)
  • A dessert from Blocks 41–50 (fermentation, bread, pastry)

This is a one-person retrospective tasting — a private tasting menu of the year. Eat slowly. Think about each one.
