Skill: True teriyaki is a Japanese glaze (soy, mirin, sake, sugar) applied and cooked in the pan — not the thick bottled sauce you pour over cooked meat. The technique: sear the salmon, flip, add the teriyaki glaze to the pan, baste continuously as it reduces and lacquers the fish. This takes about 4 minutes total.
