What you're learning: Chana masala is one of the great vegetarian dishes in the world. The chickpeas absorb spices during cooking and take on the sauce's character. Amchur (dried unripe mango powder) plus fresh lemon is what makes chana taste like chana rather than generic chickpea stew — it's the acidic finish that completes it.

Full Meal: - Chana Masala - Puri (fried hollow puffy bread — or plain roti, or naan) - Sliced raw onion and lemon
