What you're learning: Satay is Southeast Asian street food at its most elegant: thin strips of marinated chicken threaded on bamboo skewers, grilled over direct fire, served with peanut sauce and fresh cucumber. Som tam is the great Thai salad made of shredded unripe green papaya, fish sauce, lime, palm sugar, chiles, and peanuts — pounded in a mortar, not dressed like a Western salad.
