⏰ Service 2 — Provençal Vegetable Tian

← Block 1–2: Knife Skills & Kitchen Setup Overview

Skill: Slice eggplant, zucchini, and yellow squash into rounds of identical thickness — ideally ⅛ to ¼ inch. The beauty of the finished dish is a direct function of your slicing precision. Uniform slices = a dish that looks like a restaurant made it.

The recipe makes a quick tomato sauce from a 28 oz can of whole peeled tomatoes as the base — the layers are the three sliced vegetables, not fresh tomatoes. If you want to extend the knife skill exercise (slicing ripe tomatoes evenly without crushing them is genuinely harder than squash), add 2 medium tomatoes to your buy list and layer a few rounds in with the others.

Component Recipe
Protein Recommended — good burrata alongside, or a soft-boiled egg on top. Don't skip this; the tian is rich and needs something cool and creamy to anchor the plate.
Veg The tian (eggplant, zucchini, squash, tomato)
Side Simple green salad with lemon vinaigrette — the brightness balances the richness of the tian
Bread Crusty bread (not garlic bread) — plain is right here. The tian sauce is assertive enough; garlic bread fights it.

Skill targets: Consistent thickness on every slice. Go slow. This is about control, not speed.
