What you're learning: A well-executed layer cake requires: even layers (weigh the batter into the pans), flat tops (trim the dome or use baking strips), full cooling before frosting (warm cake melts buttercream), a thin crumb coat refrigerated before the final layer, and patience. Buttercream is a fat emulsion — its temperature sensitivity ties back to Block 5–6. Make a 3-layer cake: vanilla, chocolate ganache between layers, Swiss meringue or American buttercream outside.
