Skill: Making aioli from scratch (emulsified garlic mayo); Provençal composed platter
Goal: Grand aioli is one of Provence's great communal dishes: a massive creamy garlic sauce served alongside a platter of vegetables (blanched and raw), salt cod, and hard-boiled eggs. Everything on the table, aioli in the center.

Reference: Aioli technique = mayonnaise technique (from Blocks 9–10) with garlic and olive oil. The principle you already know — the application is new.

Full Meal: - Le Grand Aioli: scratch-made garlic aioli + blanched vegetables + hard-boiled eggs + bread + whatever protein you choose - White wine from Provence if possible
