What you're learning: Tikka masala is arguably the most popular Indian-origin dish in the English-speaking world. The SE grill version gives the chicken the char you otherwise get from a tandoor. The masala sauce (tomato, cream, ginger, garam masala) is richer and more accessible than butter chicken's sauce but built the same way.
