Skill: Fish with crispy skin requires a hot, well-oiled pan and patience. Press the fish gently against the pan for the first 30 seconds to prevent curling. Then leave it alone. Cook 80% of the way on the skin side. Flip only once, finish for 60 seconds on the flesh side.
