Skill: Porchetta is pork belly wrapped around a seasoned loin (or all-belly), rolled, tied, and slow-roasted. Fennel seed, rosemary, garlic, black pepper, and lemon zest are traditional. The skin crackles. The interior stays impossibly juicy. This is the most complex pork project of the block.
