Session 112 — Porchetta: Italian Pork at Its Peak

← Block 21–22: Pork & Charcuterie Overview

Skill: Porchetta is pork belly wrapped around a seasoned loin (or all-belly), rolled, tied, and slow-roasted. Fennel seed, rosemary, garlic, black pepper, and lemon zest are traditional. The skin crackles. The interior stays impossibly juicy. This is the most complex pork project of the block.

Full Meal: Porchetta slices + braised white beans + simple arugula salad with lemon

🎥 Compare Notes: La Porchetta Definitiva — Italia Squisita — A traditional Italian porchetta from Antica Porchetteria Granieri. Compare your rolling/tying technique, skin crackling, and herb stuffing to the professional version.
