Skill: The mother tomato sauce is not marinara. It's a deeply flavored, long-cooked sauce built on a pork fat base, mirepoix, tomatoes, stock, and aromatics. The key is patience — low heat, long time, and tasting as the sauce develops. Learn to season in layers, not all at once.

Full Meal: The Best Slow-Cooked Bolognese

Bolognese takes 3–4 hours. Make it on a low-key evening when you can let it simmer while doing other things.

Component Recipe
Protein Ground beef and pork, slow-cooked into the sauce
