Skill: Vegetable stock is the quickest and most approachable. Key: don't over-simmer — 45–60 minutes max, or it turns bitter. Tonight you'll use it immediately for risotto, which also teaches you another core technique: the gradual addition of hot liquid while stirring to coax starch from Arborio rice.
