Skill: Original recipe development; choosing a technique foundation; building flavor intentionally Challenge: Design one dish that is entirely yours. Not a recreation of a recipe from the program — an original creation built on the skills you've developed.

Guidelines: - Start with a technique you've mastered (a braise, a sauce, a ferment, a bread) - Choose one cuisine's flavor logic as your framework (or blend two) - Write the recipe before you cook: ingredients, method, plating concept - Execute it. Taste it. Revise the recipe based on what you learn.

This is the creative payoff of 50 weeks of technical work. The constraints of technique become the freedom of composition.

Full Meal: - Your signature dish, plated with intention - Photograph it. This is your portfolio piece.
