Skill: Broiling is essentially an upside-down grill — radiant heat comes from above. It's ideal for finishing dishes (melting cheese, charring a surface) or for cooking thin items quickly. Keep the rack close to the element and watch constantly. Broilers operate at max heat and burn food in seconds.
