What you're learning: Beef stock is the foundation of every classic French sauce and many other traditions. The difference between white and brown stock is whether the bones are roasted first (they are, for brown stock). Roasting creates Maillard compounds that the hot water extracts during the long, gentle simmer. This is why beef stock is darker, richer, and more complex than chicken stock — and why it takes 4–6 hours. A demi-glace is simply a reduction of brown stock and brown sauce combined, concentrated to near-syrup — the most powerful flavoring agent in European cooking.
Exercise: - 2–4 lbs beef bones with marrow (ask your butcher; knuckles and marrow bones work best) - Roast at 425°F until deep brown, 45 minutes - Add roasted mirepoix (carrot, onion, celery roasted alongside) - Transfer to stockpot; cover with cold water; add tomato paste, bay, peppercorns - Simmer 4–6 hours, skimming regularly; never boil - Strain through fine-mesh; cool rapidly; defat - Store: Reduces to a semi-gelatinous consistency when chilled — that's the collagen working
