Skill: Fresh eggs, a wide shallow pan, simmering (not boiling) water with a splash of vinegar, a gentle swirl, and confidence. The white should be fully set and the yolk should run when broken. Most home cooks are afraid of poached eggs — by the end of tonight, you shouldn't be.
