Session 8 — Speed Benchmark
← Block 1–2: Knife Skills & Kitchen Setup Overview
Skill: Time yourself dicing one onion. Write it down. This is your baseline. At the end of Block 4, you'll time yourself again. Speed is not the goal — having a reference point is.
Full Meal: Shakshuka + leftover chicken from earlier in the block thighs (warmed in a skillet)
Shakshuka requires dicing onion, pepper, and garlic as its entire prep — your speed drill is built into the recipe.
| Component | Recipe |
|---|---|
| Protein | Eggs poached in the shakshuka sauce + leftover chicken thighs from earlier in the block |
| Veg | Onion, red bell pepper, hot chile — charred on high heat, then simmered with 1 can whole peeled tomatoes (the shakshuka base) |
| Starch | Crusty bread — a thick slice, toasted or lightly grilled. Plain is right here; the shakshuka is already assertive. |
🎥 Compare Notes: How to Make Shakshuka — The same dish. Notice that his onion and pepper dice is the entire prep step — the very thing you're timing today.
