The project session you make three things — stock, soup, and a complete dinner — that set you up with leftovers and frozen stock for weeks.

Time Task Recipe
Morning Big batch beef/veal stock (6–8 hrs, mostly passive) Homemade Beef Stock
Dinner French Onion Soup using your fresh beef stock French Onion Soup
Sides Watercress Salad with Lemon Vinaigrette + Garlic-Rubbed Grilled Bread Salad

Freeze the remaining stock in 1-cup portions. You now have stock in your freezer at all times. This changes your cooking permanently.
