⏰ Service 25 — Lobster Night

← Block 19–20: Shellfish Overview

Skill: Cooking whole live lobster humanely and confidently; making a pan sauce or bisque from shells Read first: Stop Overcooking Lobster | Lobster Bisque

Plan: Buy 2 lobsters (1.25–1.5 lb each). Cook one for immediate eating (broiled, steamed, or grilled). Save shells + any unused parts for a quick bisque or at minimum a shell oil/butter you can freeze.

Full Meal: - Lobster, cooked your chosen method - Lobster bisque from shells (or shell butter to freeze) - Serious Eats — Corn on the Cob with Miso Butter + drawn butter and lemon

Component Notes
Shellfish 2 lobsters — 1 for eating, shells for bisque

Sauce Drawn butter + lemon wedges
